Hidden in the depths of Abbeydale Brewery lurks our nano-batch barrel ageing and souring project: the Funk Dungeon.
Turning back the pages on the Funk Dungeon, Ryes Again is a reworking of the very first release from our mixed fermentation project. A blend of beers aged in barrel for up to four years on cherries, raspberries, blackcurrants and coffee husks, expect an almost balsamic-esque sourness holding a berry fruit character and oodles of cherry flavours, softened with hints of marzipan and vanillin from the oak barrels, and a spicy, slightly dry finish.
