We have once again teamed up with our really good friends at Locksley Distilling to bring back our signature collaboration hop gin.
After a rigorous research process, including cold distilling multiple hops to find the perfect match for the botanicals.
We settled on mosaic and decided to loosely base the flavours on our mosaic hopped Heathen. One of modern brewing’s best loved and most versatile hops, we really wanted the fruits and florals of this bright and breezy hop to sing, without the bitterness we seek in brewing beer. To achieve this, Locksley vacuum distilled mosaic from hop pellet – avoiding any of the astringent notes that could come about were the hops to meet heat as they do in a brew.
Vacuum distillation allows gin makers to distill at much lower temperatures and is being called revolutionary in the gin world. Benefits include flavour preservation and increased precision and control over the process. In this very specific instance, it has allowed us to extract all of Mosaic’s gin-suitable flavours without imparting it’s beer-suitable flavours.
To amplify the hops, other profiles from Heathen have been added with the essence of cold distilled pink grapefruits and papaya. Five other traditional botanicals form the base and the result is a delicate, subtle gin that really elevates the hop flavour and its tropical pops.
We’re so grateful to the incredibly skilled crew at Locksley for bringing this very special gin to life. We think this could be the only vacuum distilled hop gin in the world!

DELIVERY INFO
All orders are packaged within 24 hours Monday to Friday, and are delivered in between 1 and 4 days. Please be aware that we cannot offer weekend delivery, and orders made after 12pm on Thursday will be sent the following Monday in order to avoid them spending multiple days in transit.
